Responsible for maintaining a high standard of operational hygiene in all kitchen areas in compliance with Hotel & Hygiene Regulations.
Areas of responsibility:
- Complete HACCP checklist.
- Clean fridges, ovens, food mixers, and food stores.
- Pot wash and area surrounds.
- Maintain hygiene in kitchen areas and storage areas.
- Ensure all bins are emptied, including refuse sacks and boxes.
- Arrive for work ready to start on time, wearing a full clean uniform as per hotel standard in accordance with company grooming policy and appropriate PPE as assigned by the company.
- Maintain a high level of personal hygiene (i.e. change aprons/hats etc. as required) throughout the duty shift.
- Carry out cleaning duties as outlined in the cleaning schedule and complete daily/weekly cleaning checklists for all cleaning tasks performed.
- Clean pots, pans, and equipment as required and ensure they are stored correctly and neatly.
- Report any damaged equipment to the head chef and/or manager on duty.
- Empty bins when full or as requested.
- Conduct thorough deep cleaning as per schedule of kitchen/larder areas, equipment, and storage areas.
- Wear relevant protective clothing provided when handling hazardous materials (e.g. rubber gloves/face masks).
- Attend training sessions/meetings as required.
- Report any damaged/defective equipment to the Senior Chef on duty.
- Ensure that your areas of responsibility are maintained in a safe, hygienic, healthy, and hazard-free manner and environment.
- Comply with company policy regarding fire, health & safety, hygiene, food hygiene, and security.
- Be aware of and understand your responsibilities outlined in the Health and Safety Statement and Staff Handbook.
