The Chef de Partie is responsible for managing a designated section of the kitchen and ensuring every dish is prepared to the required standard. The role involves maintaining food quality, supporting junior chefs, and following all food safety and hygiene procedures.
Key Responsibilities
- Prepare, cook, and present dishes to the restaurant’s standards.
- Take responsibility for a specific kitchen section during service.
- Ensure all food is prepared consistently and served on time.
- Maintain high standards of cleanliness and organisation within your section.
- Follow recipes, portion sizes, and presentation guidelines.
- Monitor stock levels and report shortages to senior chefs.
- Assist with stock rotation and ensure all products are stored correctly.
- Minimise food waste and control portioning.
- Check the quality and freshness of ingredients before use.
- Comply with all food hygiene, health and safety, and HACCP procedures.
- Train and support Commis Chefs and Kitchen Assistants.
- Work closely with the Head Chef and Sous Chef to deliver smooth kitchen operations.
- Assist with menu development and daily specials when required.
- Maintain kitchen equipment and report faults immediately.
- Remain calm and organised during busy service periods.
Skills and Experience
- Previous experience as a Chef de Partie or strong experience as a Commis Chef.
- Good knowledge of food preparation and cooking techniques.
- Understanding of food hygiene regulations and HACCP.
- Ability to work under pressure in a fast-paced kitchen.
- Strong organisational and time management skills.
