About Us: At Daylesford, our Bakers handcraft award‑winning organic breads and viennoiserie for our four Farmshops, their bustling cafés, and the pubs and hotels within the Bamford Collection, ensuring every item reflects the exceptional quality and distinctive standards of our brand.
Responsibilities:
- Craft exceptional organic breads and viennoiserie to Daylesford’s exacting standards.
- Bring artisan skill and seasonality to life in every product, working closely with the Head Baker to uphold our award‑winning quality.
- Confidently handle all bakery tasks, mixing, laminating, shaping, baking, scaling ingredients, and interpreting daily orders, while maintaining pace and precision.
- Ensure all ingredients and prep are ready on time, supporting efficient production and 98%+ fulfilment.
- Champion food safety, organic integrity, and audit requirements, including Soil Association standards and internal hygiene routines.
- Minimise waste through careful production and an uncompromising eye for detail.
- Support financial targets by working efficiently and producing consistent, high‑quality results.
- Communicate clearly with bakery colleagues and wider teams, contributing positively to recipe updates, operational changes, and cross‑department collaboration.
- Represent Daylesford with professionalism, teamwork, and pride.
Skills & Requirements:
- Exceptional attention to detail, ensuring every product meets Daylesford’s high standards, from precise weighing and measuring to consistent shaping, scoring, and finishing.
- Skilled in hand‑shaping doughs, confident in shaping sourdoughs and other artisan loaves by hand, creating uniform, high‑quality products with excellent structure and appearance.
- Artisan bread‑baking expertise. Strong understanding of fermentation, dough handling, lamination, and baking techniques, producing organic breads and viennoiserie with depth of flavour and exceptional craft.
- Ability to work positively and effectively with Bakers, Junior Bakers, and cross‑functional teams to maintain smooth production and uphold Daylesford’s values.
- Strong food safety knowledge, including all hygiene, due‑diligence, and organic standards, safeguarding product quality and supporting our Soil Association accreditation.
