Target Staff are looking for a permanent General Manager for a well-known restaurant. This restaurant has been part of Liverpool’s hospitality scene for over a decade. Known for exceptional cocktails, great food, live music and unforgettable hospitality, it has become one of the city’s most loved independent venues. Our client is investing significantly in the business, with plans to refurbish the venue, elevate their food and drinks offering, enhance the guest experience and grow their private events business. Their ambition is simple: to create one of the most exciting hospitality destinations in the North West.

We’re looking for an exceptional General Manager to lead that journey. This isn’t a role for someone who simply runs shifts. We’re looking for someone who lives hospitality, knows where the industry is heading before everyone else does, and is obsessed with great restaurants, amazing bars, incredible wine, brilliant cocktails and unforgettable guest experiences.

You’ll have complete responsibility for one of Liverpool’s most recognisable hospitality venues. Working alongside our senior leadership team, you’ll help shape the future through:

What You’ll Be Responsible For

Commercial Leadership

  • Full P&L responsibility.
  • Deliver revenue growth and profitability.
  • Maximise labour productivity and gross profit.
  • Analyse performance and identify opportunities.
  • Deliver budget and EBITDA targets.
  • Manage stock, costs, compliance and operational excellence.

Creative Leadership

We want someone who helps create trends. You’ll constantly be looking for ways to evolve the business through:

  • Seasonal food and drink concepts.
  • New cocktail and wine experiences.
  • Collaborations with local producers and brands.
  • Unique events and guest experiences.

Live Music, Events & Private Hire

Live music has always been part of our client's identity. Working closely with our Music Manager, you’ll support the successful delivery of our live music programme, ensuring every event is professionally executed and enhances the guest experience. You’ll also play a key role in growing our private events business, delivering exceptional experiences within our Pillbox Private Hire Room, including weddings, celebrations, corporate events and exclusive parties.

Your responsibilities will include:

  • Supporting the music manager with the planning and delivery of Frederiks’ live music programme.
  • Ensuring live music events run seamlessly from an operational and guest experience perspective.
  • Working alongside Marketing to maximise attendance and commercial performance.
  • Driving bookings for the Pillbox Private Hire Room.
  • Delivering outstanding weddings, celebrations, corporate events and private parties.
  • Building relationships with local businesses, event organisers and private clients.
  • Ensuring every private event reflects our client's brand and exceeds guest expectations.

  • Supporting refurbishment planning and implementation.

  • Helping shape the future food and drinks concept.
  • Creating new guest experiences.
  • Working closely with Marketing on launches and campaigns.
  • Ensuring every investment improves both guest experience and commercial performance.

About You

You’ll already be operating at a high level within premium hospitality. You’ll have:

  • A minimum of 1 year’s experience as a General Manager or senior leader within a restaurant, cocktail bar or hospitality venue, or 2 years as AGM or DGM.
  • Strong commercial and financial acumen.
  • Excellent restaurant and bar operations experience.
  • Outstanding knowledge of wines, cocktails and premium drinks.
  • A strong understanding of current food and drink trends.
  • Experience working alongside chefs to develop menus and guest experiences.
  • A genuine passion for independent hospitality.
  • Excellent leadership and coaching skills.
  • High personal standards and attention to detail.
  • The ability to balance creativity with commercial performance.

Desirable

  • Experience launching or repositioning hospitality venues.
  • Existing relationships within Liverpool’s hospitality industry.
  • Strong understanding of brand positioning.
  • Experience delivering successful private events and weddings.
