Tân A Môr is a growing private chef and wild dining experience company on the Pembrokeshire coast. We now also own and run a restaurant and bar on the Dale waterfront, serving sourdough Neapolitan-style pizzas, fresh pasta, and a fire-cooked à la carte menu inspired by the sea and local landscape. Our food celebrates the best of local, seasonal and foraged produce, cooked over flames in a stunning coastal setting.
We are looking for a creative, motivated Sous Chef who is excited by the idea of experimenting with new flavours, wild ingredients, and cooking over open fire. This is a rare opportunity to develop your skills in fire-based cookery across both our event dining and our new restaurant operation, while working in a small, supportive, and imaginative team.
What You'll Do
- Show strong leadership and management skills, providing on the job training for younger team members.
- Manage stock levels and inventory, ordering and rotating stock when needed.
- Show strong organisational and conflict management skills.
- Assist the head chef and team across both the restaurant and event feasts.
- Prepare high-quality dishes including sourdough Neapolitan-style pizzas, handmade pasta, and fire-cooked à la carte dishes.
- Work with local, seasonal produce, including local beef, foraged or wild ingredients where appropriate.
- Participate in open-fire cooking, fire management, and outdoor food preparation.
- Help develop new ideas, dishes, and tasting menus - creativity is encouraged.
- Maintain high standards of food safety, organisation, and cleanliness.
- Support setup and breakdown for events and restaurant services.
