Role Overview
Our client is looking for a skilled, experienced butcher who takes pride in their craft. This is a hands-on, production-focused role working with full carcasses, breaking them down to precise specifications in a fast-paced environment. You will be part of a small, highly capable team, with around 95% of your time spent on practical butchery. This role is not suitable for candidates with retail-only or counter-service experience.
What You’ll Be Doing
- Breaking down full carcasses (beef, pork, lamb) with precision and consistency
- Preparing and portioning high-quality cuts, including aged beef and seasonal poultry
- Applying traditional butchery techniques to maximise yield and quality
- Maintaining strict food safety, storage, and cold-chain standards
- Working nose-to-tail to ensure full utilisation of each carcass
- Producing cuts to exact customer specifications
- Collaborating with the production team to meet daily targets
- Keeping your workspace clean, organised, and compliant
- Supporting weekly close-down, including cleaning and stock control
What We’re Looking For
Essential- Proven experience as a butcher in a production or wholesale environment
- Strong whole-carcass butchery skills (essential)
- Not suitable for retail-only or catering-only backgrounds
- Excellent knife skills and attention to detail
- A team player who can also work independently
- Reliable, hardworking, and takes pride in their work
- Comfortable with physically demanding tasks
- Knowledge of meat ageing and maturation processes
