At the heart of the beautiful village of Southrop, just a short stroll from the main estate, sits The Swan – our charming village pub with a recorded history dating back to 1606. Originally a bakehouse serving bread and ale to local farm workers, The Swan has been lovingly restored with roaring fires, low ceilings, higgledy-piggledy furniture, and a warm, welcoming atmosphere. It offers honest, seasonal pub food using the very best produce from our kitchen garden and estate, alongside great local beers, wines, and cocktails. The Swan is a true community hub and a favourite destination for both villagers and visitors seeking authentic Cotswolds hospitality.
The Role
We are looking for an experienced and passionate Pub Manager to lead The Swan. You will oversee all aspects of the pub’s day-to-day operations, ensuring outstanding guest experiences, excellent standards, and strong commercial performance. Reporting to the senior management team, you’ll play a key role in maintaining The Swan’s reputation as one of the Cotswolds’ most loved village pubs.
Responsibilities
- Lead and inspire the front-of-house and kitchen teams to deliver warm, attentive, and efficient service
- Manage all aspects of pub operations, including staffing, stock control, maintenance, and health & safety
- Drive sales and profitability through excellent menu execution, events, and local marketing
- Maintain the highest standards of cleanliness, presentation, and compliance
- Develop strong relationships with the local community and our Thyme estate guests
- Work closely with the Head Chef and Thyme’s wider team to showcase seasonal, farm-to-table produce
- Handle supplier relationships, budgeting, and reporting
