Impala, our newest restaurant will open its doors in Spring of 2026. Led by chef Meedu Saad, co‑owner and executive chef of Kiln, Impala is an open fire grill restaurant, with influences from North Africa to North London. This project is a culmination of recipes and techniques collected from the unruly metropolises that have shaped Meedu’s cooking. Our restaurant's larder is built across the seasons, and an absolute focus on quality of ingredients founded upon long term farming projects. The room, led by Fanny Derozier, who has spent the last six years at Kiln, will have an atmosphere which recalls the energy of the Friday markets of Cairo, colliding with a Soho bar. The wine list, led by Penny Vine and Martina Lanarch, will focus on offering multiple cuvées and vintages from producers whom they are inspired by.

What you’ll be doing:
- Deliver memorable guest experiences through table‑side consultations, curated pairings, and storytelling that brings the wine list and our menu to life.
- Lead with passion and enthusiasm, motivating the FOH team to embrace and represent Impala’s wine program with confidence and knowledge.
- Working across a range of service areas in a dynamic venue, engaging with not just wine, but all aspects of the guest experience.
- Engage with winemakers, importers, and distributors to secure exclusive bottles and vintages.
- Assist with the proper storage, care, and rotation of the wine cellar to ensure optimal conditions and reduce waste.
- Participate in a structured wine education program for the FOH team, including tastings, service training, and knowledge sharing.
- Work closely with the wider wine team to monitor margins, plan reorders, and ensure consistent stock levels across all wine offerings.
What you’ll bring:
- A deep, demonstrable knowledge of wine, from classic regions to emerging producers, with a strong understanding of how wine enhances food.
- 2–5 years of experience in a wine or sommelier role within a fast-paced, quality-led restaurant.
- Excellent communication and storytelling skills that engage both guests and team members.
- Experience mentoring and educating others in wine knowledge, from beginner to advanced levels.
- Organisational skills and experience managing wine inventory.
- A genuine enthusiasm for hospitality and the guest experience, with a passion for sharing the craft and culture of wine.
- Flexibility to work varied shifts across 5 out of 7 days.
