We are now looking for a skilled and passionate Butcher to join our central butchery team, supporting all restaurants across the group.
This is an exciting opportunity to work with exceptional produce, whole carcass butchery, and some of the UK’s best suppliers, while contributing to the high standards that define our restaurants.
Butcher Role
Based at our dedicated butchery facility near London Fields, Hackney, you will work closely with the butchery team, Head Chefs and kitchen teams across the group to prepare and deliver consistently outstanding produce.
The ideal candidate will have strong technical butchery skills, a passion for quality ingredients, and an interest in ethical sourcing and sustainability.

While previous butchery experience is beneficial, we can provide training for the right person.

- What you'll be doing as Butcher
- Prepare, portion and process meat and poultry to the highest standards.
- Carry out whole carcass and primal breakdown where required.
- Ensure consistency in cuts, specifications and presentation across all restaurant sites.
- Support chefs with specialist cuts and bespoke preparations for menus and events.
- Maintain excellent product knowledge, including seasonality, breeds and provenance.
- Quality & Food Safety
- Carry out quality checks to ensure all produce meets Super 8 standards.
- Follow all food safety, hygiene and HACCP procedures.
- Maintain a clean, organised and safe working environment.
- Ensure all equipment is used, cleaned and maintained correctly.
- Support full traceability and accurate labelling of all products.
- Stock & Organisation
- Assist with stock rotation and inventory management.
- Monitor product levels and report shortages or discrepancies.
- Help minimise waste and maximise yield through efficient butchery practices. Support deliveries, storage and ordering processes where required.
- Teamwork & Communication
- Work collaboratively with chefs and restaurant teams across the group.
- Contribute to maintaining high operational standards within the butchery.
- Share knowledge and support the training of junior team members when needed.

- Previous experience in a professional butchery environment, ideally within restaurants or hospitality.
- Strong knife skills and technical butchery knowledge.
- Experience with whole animal and primal breakdown is highly desirable.
- A genuine passion for exceptional produce and sustainable sourcing.
- Excellent attention to detail and organisational skills.
- Ability to work efficiently in a fast‑paced environment.
- A positive attitude and collaborative approach to teamwork.
