We're now looking for a Butcher to work with our butchery team across the group — someone who is as passionate about exceptional produce as they are about leadership, innovation, and sustainability. As our Butcher, you will lead all butchery operations across all five of our sites in London, working from a brand new butchery location close to London Fields, Hackney. This is a hands‑on leadership role focused on delivering consistent quality, building a high‑performing team, and contributing to menu development and sourcing. You will work closely with Head Chefs, Head of Sourcing, the Operations Director, and the wider kitchen teams to ensure that butchery standards reflect the precision, care, and creativity that define our food.

What you’ll be doing:

  • Product Quality and Supplier Management
    • Ensure consistently high quality in all butchery output, with regular quality checks and corrective feedback where needed.
    • Manage and grow relationships with existing suppliers while sourcing new producers who align with our sustainability and quality values.
    • Support chefs and the development team with expert input on cuts, yield, seasonality, and sourcing.
    • Take ownership of quality assurance across all restaurants, ensuring each site receives consistent, well‑prepared produce.
  • Inventory, Supply and Waste Management
    • Oversee stock levels and ordering across all sites, including bi‑weekly stock takes, invoice processing, and discrepancy checks.
    • Coordinate supply planning in line with upcoming menus, restaurant volumes, and seasonal availability.
    • Implement efficient systems to reduce waste, improve yield, and make responsible use of all product.
    • Support traceability and transparency across the supply chain, maintaining accurate records and reports.
  • Health, Safety and Hygiene Compliance
    • Ensure full compliance with food safety regulations and hygiene protocols, across all butchery areas.
    • Oversee the correct use, cleaning, and maintenance of all equipment, tools and facilities.
    • Deliver regular health and safety training to all butchery staff, including proper handling, hygiene and sanitation.
    • Build a safety‑first culture, where all team members take responsibility for maintaining a clean and compliant environment.

  • Significant experience in a butchery role, ideally in a restaurant or hospitality environment.
  • Excellent technical skills, with a deep knowledge of meat breakdown, storage, preparation, and seasonal sourcing.
  • A strong leader who can motivate, train and retain a skilled team.
  • Highly organised, with the ability to manage operations across multiple locations.
  • A deep respect for produce and sustainability, with an understanding of ethical sourcing.
  • Strong communication skills and a collaborative working style.
  • Full UK right to work documents.
