We're now looking for a Bar Manager to join our bar team. As Bar Manager at Impala, you'll work across the full front-of-house team, combining confident floor service with creative bar leadership. You'll play an active role in shaping our drinks programme, ordering, stock management, and team training. Impala, our newest restaurant, will open its doors in Spring 2026. Led by chef Meedu Saad, co-owner and executive chef of Kiln, Impala is an open fire grill restaurant with influences from North Africa to North London. The project is a culmination of recipes and techniques collected from the unruly metropolises that have shaped Meedu's cooking. Our restaurant's larder is built across the seasons, with an absolute focus on quality of ingredients founded upon long term farming projects. The room, led by Fanny Derozier, will have an atmosphere recalling the energy of Friday markets of Cairo, colliding with a Soho bar. The wine list, led by Penny Vine and Martina Lanarch, will focus on offering multiple cuvées and vintages from producers they are inspired by.

What you'll be doing:

  • Bar Creativity and Seasonal Innovation: Bring a deep knowledge of traditional cocktails while developing original recipes that reflect our produce-first approach. Work closely with the kitchen and sourcing teams to align drinks with seasonal menus. Be the creative lead for our evolving bar offering throughout the whole concept.
  • Front of House Support and Service: Confidently deliver bar and floor service, ensuring guests feel welcomed and well looked after. Collaborate with the wider FOH team, supporting across all areas of service as needed. Contribute to a lively and respectful team environment, focused on high standards and positive energy.
  • Training, Leadership and Development: Head up training the wider front-of-house team in drinks knowledge and bar service. Share your skills and enthusiasm with junior team members, building a culture of learning and collaboration. Take on increasing responsibility in line with your growth and experience.
  • Stock, Suppliers and Accountability: Direct and oversee your team in stock management, ordering, and accounting processes. Build strong relationships with suppliers and producers, owning the sourcing and logistics. Lead on maintaining clean, organised and well-stocked bar spaces.

Significant bar experience in a high-quality, fast-paced environment. Strong foundation in traditional cocktails and a love for experimenting with fresh, seasonal ingredients. Comfortable delivering floor service and working across the full front-of-house team. A team player with a collaborative mindset and positive energy. Highly organised, with a keen eye for detail and quality. Passionate about produce, hospitality, and learning new skills. Full UK right to work documents. Ability to work flexibly, full time.
