SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.
Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.
The Role
As our Chef de Partie, you will be at the heart of our kitchen operation, bringing creativity, passion and technical precision to everything you prepare. You will work with only the finest seasonal, fresh ingredients carefully sourced for quality and integrity to craft and present dishes that exceed our exacting brand standards. Supporting the Head Chef and Sous Chef, you'll mentor junior team members, develop new dishes, and take pride in creating a memorable dining experience with every plate that leaves the pass.

What You'll Be Doing
- Preparing, producing and presenting all dishes to the highest quality, using seasonal, fresh, high quality produce and developing creative new menu items
- Testing food items for correct temperature, maintaining quality and presentation standards, and minimising wastage
- Conducting daily ingredient inspections and managing storage, labelling and stock rotation using the first in, first out rule
- Maintaining exceptional kitchen cleanliness and hygiene standards, including deep cleaning and organising cool rooms, freezers and stockrooms
- Supervising and mentoring junior team members through guided training and task delegation
- Completing accurate stockroom requisitions, stock takes and wastage reports to ensure adequate kitchen supplies
- Communicating regularly with the Head Chef, relaying guest feedback and attending daily kitchen briefings
- Participating in cross training across different kitchen stations and attending training sessions to develop your skills

- Proven experience as a Chef de Partie in a quality kitchen environment

- Strong knowledge of cooking techniques, food safety and kitchen operations

- Natural mentoring ability and confidence leading junior team members
