SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality. Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service.

We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

As our Commis Chef, you will be an essential part of our kitchen, learning authentic techniques and working with the finest fresh ingredients to create beautiful dishes to our exacting brand standards. You will support the kitchen team, develop your culinary foundation, and take pride in delivering exceptional quality with every plate. This is a brilliant opportunity for someone passionate about cooking who wants to build their skills, and establish a strong foundation for career progression within an acclaimed restaurant group.

What You'll Be Doing

  • Preparing and producing menu items to the highest quality, according to recipes and brand standards
  • Testing food items for correct temperature, maintaining quality and presentation standards, and minimising food wastage
  • Setting up and breaking down kitchen workstations and ensuring all equipment is clean and safe to operate
  • Storing all ingredients correctly, labelling with dates and rotating using the first in, first out rule
  • Maintaining exceptional kitchen cleanliness, including sanitising surfaces, equipment and floors, and completing cleaning charts
  • Assisting with staff meal preparation when required
  • Reporting any spillages, breakages, maintenance issues or safety concerns immediately to the Chef
  • Attending daily kitchen briefings and actively participating in team training sessions to develop your skills and knowledge

Salary: £14.01 p/h including service charge, plus benefits
