Following the success of our Notting Hill neighbourhoodrestaurant, SUMI Marylebone will be a gem in one of London's most excitingdining destinations showcasing the finest seasonal ingredients, the best sushipreparation and warm, welcoming service. We're looking for talented individualsto join our founding team from day one, help us bring this exceptionalrestaurant to life, and grow with us as we establish a new benchmark forJapanese dining in London.

The Role

As our Bartender, you will be at the heart of the guestexperience, preparing consistently excellent drinks and bringing warmth,knowledge and personality to every service. You will work closely with thewider bar and restaurant teams to create an atmosphere that feels polished,welcoming and unmistakably SUMI.

What You'll Be Doing

• Preparing and serving cocktails and other drinks toour recipes and standards
• Setting up the bar, stocking fridges and completingmise en place before service
• Keeping the bar clean, organised and fully stockedthroughout each shift
• Welcoming guests, taking orders and makingthoughtful recommendations
• Processing orders and payments accurately
• Building a strong understanding of our food anddrinks menus
• Following allergen, licensing, hygiene andresponsible-service procedures
• Receiving and storing stock correctly, andreporting any discrepancies
• Working closely with the floor team to keep servicerunning smoothly
• Taking part in training and continuing to developyour skills and knowledge

What We're Looking For

Previous bartending experience in a quality restaurant orbar is important, but personality matters too. We are looking for someone whoenjoys connecting with guests, takes pride in their work and brings positiveenergy to the team.

You will need:

• Good knowledge of cocktails, spirits, wine and barservice
• A genuine passion for drinks and hospitality
• A warm, confident and professional approach withguests
• Strong attention to detail and high standards ofcleanliness
• The ability to stay calm, organised and efficientduring a busy service
• A practical, team-first attitude
• An interest in Japanese food and drinks would be anadvantage
• Flexibility to work evenings, weekends and bankholidays

Salary: Up to £16.01 p/h including service charge,plus benefits
