Reporting to: F&B Manager

Direct Line Staff: Bar Supervisors & Bar Staff

Hours: 37.5 per week

To oversee all operations of the Stroud Brewery bar. To meet agreed revenue and profit targets whilst maintaining exceptional quality of service to our customers and a safe and fulfilling workplace for our staff. The Bar Manager will have an eye for detail and a level of empathy that considers the diverse needs of our customers and staff, who through example and training will help shape the “culture” of Stroud Brewery. Main responsibilities:

  • Working with the Food & Beverage Manager to improve the company’s procedures, standards or policies while sticking to our ethos and regulatory guidelines.
  • Continue to maintain a high standard quality of service to our customers and a safe and fulfilling workplace for our team.
  • Lead, train and motivate a team of supervisors, bar and waiting staff.
  • Recruitment (in conjunction with Food & Beverage Manager) to ensure adequate staffing levels.
  • Liaise with the Food & Beverage Manager on a weekly basis to schedule bar staff to ensure required level of staffing is maintained for the bar, internal and external events and the farmers market, whilst meeting the KPIs.
  • Complete team appraisals and schedule in on the job training shifts.
  • Provide any internal training as required, either personally or in conjunction with other departments, to ensure bar supervisors and staff are competent within their roles.
  • Approve holiday and absence requests and return to work interviews.
  • In conjunction with Food & Beverage Manager, complete 1:1 team appraisals.

Events:

  • All requirements for staffing and food are discussed and confirmed with the Events Manager to ensure a smooth delivery.

Health & Safety:

  • Ensuring the safety of the public and bar staff.
  • Ensuring the business operates within its licensing remit.

Operations:

  • In conjunction with the Food & Beverage Manager showcase a range of our beers and organic drinks whilst controlling costs and maintaining margin.
  • Seek to meet agreed targets on resource use and waste.
  • Staff awareness and training on waste reduction and cost controls, including discounts etc.
  • To ensure that legal and company requirements are adhered to in respect of Hygiene, Health & Safety, Employment Law, and Food Safety Law for all staff, visitors and customers.

Finance:

  • Maximise revenue and profitability: Meet agreed sales targets for the bar.
  • Managing suppliers.
  • Managing wastage.
  • Strong back of house knowledge including stock management, cost control, financials, plus licensing and other legislative requirements.
  • Ensure all till transactions are dealt with correctly including band food, deposits paid, petty cash and bar tabs etc.
  • To maintain agreed GP% levels by ensuring prices reflect any changes in costs.
  • Investigate and implement ways of increasing the SPH.
  • Review cost of sales and to reduce costs where possible.

Stock:

  • Management of bar stock to reduce losses to a minimum.
  • Maintaining accurate records of all stock, including updating prices on tills.
  • Submitting monthly stock returns to Finance on the first working day of the following month.
  • Weekly line checks on key lines.
  • Stock replenishment and cost control.

Person Specification:

  • Can lead, motivate and inspire a team.
  • Experience in working in the hospitality and event industry.
  • Excellent interpersonal and communication skills.
  • Exceptional problem-solving skills and decision maker.
  • Good financial management.
  • Excellent knowledge of craft beer and real ale.

Essential:

  • Hospitality Experience - Demonstrable experience of a similar sized bar.
  • Demonstrable previous team management and development experience.
  • Demonstrable experience of supplier and consumer relationship building.
  • Previous working knowledge of ordering apps and till systems.
  • Understanding of craft beer and real ale and their production.
  • Barista/coffee experience.
  • Excellent communication, both written and verbal.
  • Able to work well in a team.
  • First aid trained.
  • Excellent communicator.
  • Personal Licence.
  • Aware of health and safety regulations and uphold exceptional hygiene standards.
  • Computer literate - Google for business, spreadsheets etc.
  • Conscientious.
  • Attention to detail.
  • Aptitude for learning.
  • Practical.
  • Reliable.
  • Friendly disposition/social.
  • “Yes-can-do” attitude.

Desirable:

  • Previous experience with Zonal till systems.
  • Full UK Driving Licence.

  • Knowledge of AV Equipment.
