The Opportunity

At Slug & Lettuce on George Street, we're looking for a General Manager who can take the energy of one of the city's busiest locations and turn it into an unforgettable guest experience every single day. This is a chance to step into a high-profile role right in the heart of the New Town. Set among some of Edinburgh's top bars and restaurants, this two-bar venue thrives on constant footfall from locals, professionals, students and visitors alike. From daytime brunches and lunches to late-night cocktails and DJ-led weekends, the business moves with the rhythm of the city. It's stylish, social and always in demand, known for its striking interiors, vibrant atmosphere and occasion-led trading.

About You

As General Manager, you'll do far more than run shifts. You'll shape the direction of the business, lead and develop a high-performing team, and drive commercial performance in a competitive, opportunity-rich market. You'll create a culture where people feel motivated, standards stay high and guests keep coming back. We're looking for someone who brings sharp commercial thinking, strong leadership and a real passion for hospitality. Someone who understands how to balance supporting their team, delivering razor sharp standards and profit, while keeping the energy and personality that makes Slug & Lettuce stand out.
