My client is a unique Lochside Spa Resort located on the tranquil shores of Loch Tay in Kenmore, Perthshire. At the heart of their resort is a Watersports Activities Centre for unforgettable lochside adventures. Berth at their Marina and dine at their Gastro Bar, my client blends relaxation, adventure, and authentic Highland hospitality.
The role of Sous Chef is part of the Gastro Bar, situated on the banks of Loch Tay, where you will find a warm welcome and a friendly smile at one of Scotland’s most scenic restaurant destinations. Their beautifully refurbished Gastro-bar offers indulgent food and wine in a rustic and relaxing environment that never fails to impress. Their wood-fired pizza oven and an open grill takes centre stage on a mouth-watering menu that caters for all, influenced by Scotland’s exquisite larder where they aim to elevate your expectations and use local and sustainable produce.
Role Overview
My client is seeking a talented and passionate Sous Chef to join their dynamic and busy kitchen team. Working closely with the Head Chef, you will be a key member of their management team, playing a key role in maintaining high standards of food quality, creativity, and consistency. Your expertise in Scottish produce and modern techniques will help elevate guests’ dining experience, while supporting a collaborative, creative and efficient kitchen environment.
Key Responsibilities
- Assist the Head Chef in menu development, focusing on seasonal, locally sourced ingredients.
- Oversee kitchen operations in the Head Chef’s absence, ensuring smooth service and adherence to their high standards.
- Lead and mentor junior chefs, fostering a positive and productive team culture.
- Maintain strict food safety, hygiene, and health & safety practices.
- Manage stock control, ordering, and supplier relationships to minimise waste and maximise quality.
What They Are Looking For
- At least two years’ experience as a sous chef in a high-quality culinary environment.
- A deep appreciation for Scottish ingredients and a flair for modern, refined cuisine.
- A creative mindset to think outside the box where you will contribute creative ideas to enhance our guest dining experience.
- Strong leadership skills with the ability to motivate and develop a team.
- Excellent organisational skills and the ability to work under pressure.
- Proven experience in menu development and costing.
- Knowledge of food safety standards, including allergens and food safety.
