The day-to-day responsibilities of a Chef de Partie:
- The Chef de Partie is responsible for delivering consistent, high-quality dishes and supporting the smooth operation of a specific kitchen section.
- This role requires strong knife skills, attention to detail, and understanding of Aki's Standard Operating Procedures.
- Follow food safety, hygiene, and HACCP regulations at all times.
- Take responsibility for a designated section (e.g., grill, sauce, pastry), ensuring quality and consistency in preparation and presentation.
- Prepare ingredients and dishes according to recipes, portion sizes, and plating style.
- Show proficiency in knife work, baking, recipe scaling, and cooking techniques.
- Assist the Senior Chef de Partie with kitchen operations during service, ensuring smooth workflow and timely delivery of dishes.
- Contribute ideas for menu development, daily specials, and seasonal updates.
- Maintain cleanliness and organization in your section, including proper equipment use and deep cleaning routines.
- Ensure proper food storage, labelling, and rotation in compliance with health regulations.
