The Role
At Soho House, a Sushi Chef will consistently produce dishes that reflect authenticity, creativity, and quality, while maintaining food safety standards and contributing positively to the kitchen team. This role will also involve working closely with the Head Chef to innovate and refine sushi offerings for the Club’s diverse clientele. Your main responsibility will be the preparation, crafting, and presentation of high-quality sushi dishes, sashimi, and Japanese-inspired small plates. The role requires precise knife skills, a refined palate, and a strong understanding of traditional and modern sushi techniques.

Responsibilities
- Maintain quality control in terms of portion size, presentation, taste, and texture.
- Uphold excellent hygiene and food safety standards in line with HACCP and club policies, with particular care for allergens and dietary requests.
- Be flexible in assisting other areas of the kitchen when required.
- Monitor quality and freshness of fish and seafood; report issues with inventory or quality to management.
- Support the Head Chef and Sous Chef in menu development, portion control, and food costing.
- Prepare sushi dishes including nigiri, maki, sashimi, and hand rolls to specification.
- Ensure daily sushi station setup and mise en place, including fish filleting, rice preparation, and garnish prep.
- Engage with team and FOH staff to explain menu items and help deliver a premium guest experience.
- Maintain appropriate stock levels of sushi-grade fish and essential ingredients.
Qualifications
- Minimum 3–5 years of experience in Japanese cuisine in a high-profile restaurant or private club setting.
- Proven ability to lead a kitchen section and mentor junior staff.
- Quality & presentation of sushi dishes consistently meet visual and flavour standards; high guest satisfaction.
- Must be able to demonstrate competency as outlined in the training schedule and Club School.
- Must be able to work flexible shifts and schedules, including weekends and holidays as needed.
- Ability to take direction, work in a team environment and work autonomously.
