About Shoreditch House
Located in East London’s historic Tea Building, Shoreditch House is an established fixture on the area’s creative scene. Highlights include a gym and rooftop pool, both with panoramic views across the city. Spread over the fifth and sixth floor, the house also has 26 bedrooms, a Cowshed Spa, two restaurants and a daily programme of events. The Members’ restaurant on the fifth floor serves an all-day club menu, while the rooftop Japanese restaurant, Pen Yen, is the destination for sushi, sashimi and dishes from the robata grill. The back-deck dining space, also on the rooftop, is the new home for Maya, a Mexican inspired dining concept bringing coastal Baja Mexican cuisine to the Shoreditch rooftop space
Role
As the Junior Sous Chef, your duties will include recruiting and training new employees, adhering to allergy procedure and food preferences as well as working with the Executive and Head Chef on developing new menu options. Working alongside the Head Chef, you will be the driving force behind the food offering making sure it is seasonal, relevant and appealing to our members and guests. You will have an in-depth health and safety knowledge ensuring that standards are kept in line with HACCP.
Qualifications
- 2-3 years’ experience in a busy high-profile kitchen
- Team player who communicates well with all colleagues
- Punctual, reliable and trustworthy
- Strong knowledge of traditional and contemporary Japanese cooking methods
- Experience with sushi preparation, fish butchery, knife handling, and Japanese ingredients
- Understanding of Japanese kitchen tools and equipment
- Good leadership skills with the ability to delegate and support junior staff
- Excellent time management and ability to perform under pressure
- Flexible and available to working both opening and closing shifts when required
