As a Pastry Commis Chef, you will support the pastry team in delivering high-quality pastries and desserts across all dining outlets, including the Rose Lounge, Events, Bistrot, In-Room Dining, and the St James Bar. Working under the guidance of senior chefs, you will assist with preparation, production, and presentation, while learning and growing within a creative and professional kitchen environment. You will be expected to uphold the highest hygiene and safety standards while maintaining a clean and organised work area. This role is ideal for someone passionate about pastry, eager to develop their skills, and contribute to the overall success of the pastry section.

Responsibilities

  • Assist in the preparation and production of pastries, desserts, and baked goods as directed by senior chefs.
  • Support with mise en place for daily service and special events.
  • Maintain high standards of food quality, consistency, and presentation.
  • Follow instructions precisely and contribute to the smooth running of the pastry section.
  • Adhere strictly to hygiene, cleanliness, and food safety regulations, including COSHH protocols and company standards.
  • Ensure all tools and work areas are clean and sanitised before, during, and after service.
  • Assist with the organisation and restocking of ingredients and materials.
  • Work collaboratively with the pastry team, showing initiative and willingness to learn.
  • Maintain professional appearance, following uniform and grooming guidelines at all times.
  • Embrace opportunities for training and development within the pastry kitchen.

Qualifications

  • A recognised culinary qualification (e.g., NVQ Level 2/3 in Professional Cookery or Patisserie).
  • Basic knowledge of pastry techniques, baking methods, and dessert preparation.
  • Understanding of food hygiene and safety standards (Level 2 Food Safety Certificate or equivalent).
  • Ability to follow recipes and instructions with accuracy and attention to detail.
  • Strong organisational skills and the ability to work efficiently under pressure.
  • A genuine passion for pastry with a willingness to learn and develop within a professional kitchen.
