Heritage Portfolio are looking for a talented and enthusiastic Lead Chef to join the team at our Central Production Kitchen in Leith, Edinburgh. We operate within some of Scotland’s leading cultural destinations, including Royal Botanic Garden Edinburgh, The Scottish National Portrait Gallery, V&A Dundee, Mansfield Traquair, the Signet Library and Perth and Musselburgh Racecourses.
With an emphasis on fresh, made from scratch cooking, our culinary teams execute outstanding catering and event services, from private dining, weddings and corporate clients to exceptional in-house café services. Under the guidance of our Executive Chef and culinary development team, you will prepare and deliver a range of menus, from deli style retail offers to high end fine dining experiences, all with our overarching ethos of quality, seasonality, provenance and flavour at their heart.
What you’ll do
- Ensuring whilst on shift at the Central production Kitchen that all recipes and specs are followed, and all dishes are produced to the highest standard.
- To help the senior kitchen team to drive production efficiencies.
- To lead event food service in multiple venues across our portfolio, ensuring all H&S HACCP and food safety policies are adhered to.
- To be able to manage varying skill sets across the Kitchen brigade whilst at venue kitchens, and working with the front of house.
- To support the Kitchen management team with all COSHH Health & Safety and Food safety processes within the Central production Kitchen.
What you’ll bring

- Desirable: Food Safety Level 3 qualification minimum.
- Experience in high end establishments.
