We’re searching for a skilled and reliable Senior Sous Chef to support the kitchen leadership at a newly launched Japanese restaurant in the West End. The menu champions modern Japanese cuisine, focusing on sharing plates, grilled dishes, and refined comfort classics in a sophisticated, multi-level venue.

The Role:

  • You’ll help manage the full kitchen operation, supporting the Head Chef with service, systems, stock, and team development – with plenty of room to contribute creatively.
  • Oversee daily prep, service, and shift management across sections
  • Lead and supervise the brigade, ensuring standards are maintained
  • Support with staff training, development, and rota planning
  • Assist with stock control, ordering, and supplier management
  • Maintain a clean, organised, and legally compliant kitchen
  • Help refine systems and structures for an efficient and positive kitchen culture
  • Work collaboratively on new menu items and specials

What We’re Looking For:

  • Senior Sous or Sous Chef experience in a high-quality restaurant
  • Confident managing both service and prep with consistency and calm
