We are seeking a creative, technically exceptional sushi leader with a deep respect for authenticity, craftsmanship, and precision.
The Role
- Lead the full sushi offering for a new opening from pre-opening through launch
- Define the culinary identity, standards, and consistency of the sushi kitchen
- Recruit, train, and inspire a high-performing sushi team

The Ideal Candidate
- Proven experience as a Head Sushi Chef or Executive Sushi Chef within a high-end or premium sushi restaurant
- Strong technical mastery across nigiri, sashimi, maki, and omakase-style service
- First-hand experience in Japan and exposure to authentic sushi culture (highly desirable)
- A passionate leader with excellent communication and team-building skills
- Creative, detail-driven, and calm under pressure
- Must hold a valid UK visa / right to work in the UK
- Available to start in February
