The restaurant serves approximately 40 covers per evening and operates five days per week, dinner only , offering a fantastic opportunity to work at a high culinary level within a more structured working pattern. The menu is centred around exceptional-quality seafood, premium seasonal produce and grill-led cooking , with a strong focus on simplicity, flavour and showcasing outstanding ingredients. The Role Working closely with the senior kitchen team, you will: Help lead the day-to-day operation of a small, talented kitchen brigade Deliver consistently high standards across approximately 40 covers per evening Work extensively with premium seafood, seasonal produce and grill cooking Support menu development and maintain exceptional food quality Lead, motivate and develop the kitchen team Oversee preparation, service, stock management and kitchen organisation Maintain excellent standards of food safety, consistency and presentation The Ideal Candidate We are looking for someone who: Has strong experience as a Senior Sous Chef or experienced Sous Chef within a high-quality restaurant Has excellent knowledge of fresh fish and seafood Comes from a strong fresh-food, fine dining or quality restaurant background Is confident helping lead a small, close-knit brigade Has excellent attention to detail and consistently high culinary standards Is organised, calm and confident during service Is passionate about produce-led cooking and working with exceptional ingredients Is open to relocating to Scotland if not already based locally Package Salary: £55,000£60,000 per annum Operation: 5 days per week Service: Dinner only Covers: Approximately 40 per evening Accommodation: Short-term accommodation provided to support relocation Location: Scotland A fantastic opportunity for a talented Senior Sous Chef to join an established, quality-driven restaurant offering excellent produce, a small professional brigade, an attractive dinner-only operation and short-term accommodation to support relocation .
