High-Profile Hotel Opening | Southern Spain
Smyth & Co is seeking an exceptional General Manager / Operations Manager to lead a collection of restaurant and late-night concepts within a high-profile new hotel opening in Southern Spain.
This is an exciting opportunity for a commercially astute hospitality leader who understands both the precision of fine dining and the energy of a vibrant late-night operation. Experience within environments comparable to Sexy Fish, Los Mochis or Annabels would be particularly relevant.
The role
Lead the opening and ongoing operation of multiple restaurant and late-night concepts, establishing a distinctive identity and consistently high standards across each.
Recruit, develop and inspire strong management and service teams.
Oversee operational readiness, service delivery and the guest experience.
Take ownership of budgets, labour costs, revenue performance and profitability.
Work closely with culinary teams and hotel leadership to ensure each concept delivers commercially and operationally.
Maintain a visible presence across the venues, leading from the front during busy services.
About you
Proven senior leadership experience across both fine dining and late-night hospitality concepts .
Experience managing multiple venues or a complex operation with several distinct concepts.
A natural leader with presence, sound judgement and the ability to build motivated, accountable teams.
Commercially sharp, highly organised and confident balancing competing operational demands.
A strong understanding of exceptional food, service, atmosphere and the expectations of a discerning international clientele.
Opening experience would be a significant advantage.
