About Us: Smoking Goat is an open-fire Thai barbecue restaurant and bar, serving food inspired by the street food of Bangkok and the laab stalls of northern Thailand. We are a busy restaurant that works closely with exceptional farmers and offers a daily-changing menu. Thai cooking experience is not required—just a passion for learning and being part of a strong, team-focused restaurant.
What you’ll be doing:
- Collaborate closely with our senior kitchen team to maintain consistently high standards of food preparation and presentation, ensuring guest satisfaction.
- Oversee and manage your assigned kitchen section, coordinating daily prep schedules and ensuring smooth operations.
- Lead daily briefings for your section team to set expectations and assign responsibilities.
- Develop and implement comprehensive training plans tailored to the needs of junior staff, focusing on essential skills such as food preparation, presentation, and efficient workflow.
- Monitor progress and assess training effectiveness, adjusting programmes as needed to ensure continuous improvement and high performance.
- Conduct routine inspections of your section to ensure compliance with internal and external hygiene and sanitation standards.
- Ensure all team members strictly adhere to food safety practices, including proper handling, storage, and labelling of ingredients.
- Serve as primary support to Sous Chefs during high-volume service periods, providing backup and troubleshooting as required.
- Address any issues that arise during service quickly and efficiently to maintain consistent quality.
- Maintain knowledge of our produce and suppliers to ensure high-quality ingredient selection.
- Ensure a strong understanding of food safety standards and legislative requirements to uphold a 5-star EHO rating.
What you’ll bring:
- Passion and knowledge of restaurants, good cooking, good sourcing of food and drink are a great headstart. But most important is the appetite to learn, grow and be a part of building the most exciting restaurant group in London.
- 2 years of experience in a fast paced kitchen, where excellence is consistent on every plate.
- You’re confident in training and developing junior team members.
- A love for cooking and creating unique dishes.
- Flexibility to work varied shifts across 5 out of 7 days.
- Full UK right to work documents.
