We are looking for a dynamic and customer-oriented Waiter who will also support the bar service. The ideal candidate enjoys working in hospitality, has strong communication skills, and is able to provide excellent service to ensure a memorable guest experience.

What will you do?

  • Lead day to day bar operations across service periods (brunch through late), ensuring smooth running on every shift.
  • Manage, train and motivate the team: briefings, coaching, standards, performance management, onboarding.
  • Own the service standards: speed, friendliness, consistency, cleanliness, guest experience and presentation.
  • Rota planning & labour control: build rotas to match forecast trade, manage breaks, cover, and keep staffing efficient.
  • Stock management & ordering: weekly ordering, stock rotation, correct storage, supplier liaison, and maintaining par levels.
  • Cost control & GP performance: monitor pour costs, wastage, comps, and stock variance; drive strong margins.
  • Maintain a safe, compliant venue: licensing adherence, Challenge 25, incident logs, risk awareness, and allergen diligence.
  • Quality control: ensure drinks are made to spec, glassware standards, garnish/prep consistency, and equipment upkeep.
  • Support events & activations: staffing plans, set-up, service flow, and post-event review.
  • Drive sales: upselling culture, menu knowledge, promotions, and delivering new launches smoothly.
  • Reporting to senior management: with clear weekly updates on sales, labor, stock variances, maintenance issues, and success.

What do we look for?

  • Proven experience as a Bar Manager / Assistant Bar Manager / Supervisor in a high-volume, fast-paced bar or hospitality venue.
  • Strong leadership skills with a track record of training, motivating and managing a team on shift.
  • Confident running full bar operations open/close, shift management, standards, and service flow.
  • Experience with stock control ordering, deliveries, rotation, stock counts, and reducing wastage/variance.
  • Solid understanding of GP / cost control and the ability to work to targets (labor, margins, wastage).
  • Excellent customer service and the ability to handle complaints and issues calmly and professionally.
  • Strong knowledge of licensing compliance (Challenge 25 / refusal log / incident awareness) and responsible service.
  • High standards for cleanliness, safety and organization including maintaining checklists and routines.
  • Flexibility to work evenings, weekends, mornings, etc (including peak periods and events).
  • Right to work in the UK and ability to start within an agreed timeframe.
  • Fluent English (spoken and written) for guest interaction and operational communications.
