Moving Venue is one of the original event caterers in London. With accreditation at over 30 venues across the capital, Moving Venue caters for more than 350 events annually. The scale and variety of these events showcase our talent for handling challenging projects while continually pushing the boundaries of what is achievable. The Chef de Partie will play a pivotal role in the preparation and delivery of high-quality pastry for Smart Group events. Working under the guidance of the Group Executive Pastry Chef and Pastry Head Chef, the Chef de Partie will oversee a section of the pastry kitchen, ensure smooth production workflows, maintain quality standards, and contribute to menu development.

Key Responsibilities

  • Support the Group Executive Pastry Chef and Head Pastry Chef in setting and maintaining standards for the kitchen brigade, including casual and agency staff.
  • Organise and manage daily pastry production sheets, allocating tasks to team members to ensure an efficient workflow.
  • Delegate tasks to kitchen staff effectively, promoting motivation, development, and adherence to quality standards.
  • Brief casual and agency staff to ensure consistent standards across all shifts.
  • Train junior team members, fostering skills development within the brigade.
  • Ensure all events are accurately prepared, labelled, and cross-checked against transport and production sheets with the most up-to-date information.
  • Assist in planning staffing requirements for weekly production and on-event nights.
  • Support problem-solving and maintain a smooth-running team during high-demand periods.
  • Contribute to the development of new dishes and menus alongside the Group Executive Pastry Chef and Head Pastry Chef.
  • Maintain accurate and up-to-date records of recipes, production sheets, and other operational paperwork.
  • Support adherence to the Group’s Corporate Social Responsibility Policy, including minimising waste and environmental impact.

Health & Safety / Food Safety Duties

  • Ensure full compliance with the Group’s Food Safety Policy, Health & Safety requirements, and current legislation.
  • Maintain cleanliness and hygiene of all kitchen areas and equipment in line with COSHH and Health & Safety standards.
  • Follow FIFO (First In, First Out) protocols, manage dry stores, and ensure labels are accurate and up to date.
  • Assist in ordering and purchasing food products using the designated system.
  • Participate in mandatory and online training to maintain compliance and professional development.

Skills And Attributes

  • Great team player, motivated, and passionate about their role within a busy team.
  • Proven experience as a Pastry Chef de Partie or in a similar role.
  • Strong leadership and team management abilities.
  • Excellent understanding of pastry production, recipe execution, and event-based service.
  • Knowledge of food safety, hygiene standards, and Health & Safety legislation.
  • Creative approach to menu development and a passion for culinary excellence.
  • Ability to manage multiple tasks under pressure while maintaining high standards.
