Six by Nico is a vibrant and unique restaurant group built around themed six-course tasting menus, with restaurants across the UK and Ireland. As a company, we believe in giving our people the opportunity to develop their skills and progress. We’re proud to employ brilliant people who are passionate about what they do. We’re looking for an enthusiastic Cocktail Production Assistant to join the team at our East End Development Site in Glasgow. This is a part-time role working approximately 20 to 30 hours across two or three days per week.

The role involves preparing, batching and bottling the cocktails our bar teams serve in Six by Nico restaurants across the UK and Ireland. You’ll follow each batch from the first measure through to dispatch, ensuring that every bottle is labelled, packed and ready for service.

Key responsibilities:

  • Prepare pre-batched cocktails to Six by Nico recipes, measuring ingredients accurately and checking each batch for quality and consistency.
  • Plan your production day around restaurant orders so the right drinks are ready in the quantities each venue needs.
  • Bottle, label and store finished batches correctly, then pack orders for distribution across the group.
  • Follow strict hygiene procedures at every stage, keeping the production area, equipment and work surfaces clean and ready for use.
  • Monitor ingredients, bottles and packaging, rotate stock and flag shortages ahead of the next production run.
  • Use Microsoft Office to keep accurate records of batches, stock and orders.
  • Work independently on production tasks and coordinate with colleagues when preparing orders for dispatch.
  • Safely move ingredients and finished cases, including some heavy lifting, and undertake occasional driving for collections or deliveries.

Preferred requirements:

  • You must be aged 18 or over and hold a valid driving licence, as occasional driving forms part of the role.
  • Has a genuine interest in cocktails and how they’re made. Previous experience in bartending, cocktail preparation or drinks production would be an advantage.
  • Is well organised and can keep track of several restaurant orders at once.
  • Has an eye for detail, whether measuring an ingredient, checking a batch label or counting bottles into a case.
  • Is confident working alone and as part of a team.
  • Is comfortable using Microsoft Office and following strict hygiene procedures.

Benefits you can enjoy:

  • Opportunities to develop your skills and grow your career across Six by Nico.
  • The chance to build hands-on cocktail production experience alongside people who care about the drinks they send out.
  • Christmas Day and Boxing Day guaranteed off to enjoy the festivities.
  • An annual pay review that recognises your skills, knowledge and experience.
  • Opportunities to travel across our Six by Nico sites in the UK and Ireland.
  • Access to Wagestream, giving you the option to access your pay as you earn it.
  • A voice through our People Engagement Board, where you can share ideas and feedback each month.
  • Access to our Employee Assistance Programme through Health Assured, including mental health, wellbeing and financial support.
  • Access to Hospitality Rewards once you’ve successfully completed your probationary period.

If this sounds like something you’d love to be part of, we’d love to hear from you!
