The Chef de Tournant is a versatile and reliable kitchen professional who supports daily operations across multiple stations. This role ensures consistent food quality, hygiene standards, and smooth kitchen operations, while providing coverage and operational support where needed.

Role and Responsibilities:

  • Support the Head Chef in the daily operations of all F&B outlets, banquets, and events.
  • Prepare and cook a variety of Chinese dishes in accordance with established recipes and standards.
  • Maintain high standards of food quality, presentation, portion control, and hygiene compliance.
  • Ensure all food preparation meets regulatory food safety and licensing requirements.
  • Monitor stock levels and handle requisition and ordering of ingredients.
  • Conduct daily and monthly inventory checks.
  • Keep updated on market trends; assist in menu development and standardization of recipes (with photos).
  • Make operational decisions within established guidelines set by Management.
  • Rotate across kitchen stations and provide coverage during staff leave or peak periods, including: Dim sum (steaming), soup preparation, steamed dishes (e.g., fish), and roast meats.
  • Assist supervisors with basic administrative tasks, including simple computer work and ordering processes.
  • Follow the workplace safety and health system, safe work procedures or safety rules implemented at the workplace.
  • Not engage in any unsafe or negligent act that may endanger yourself or others working around you.
  • Use personal protective equipment provided to you to ensure your safety while working. You must not tamper with or misuse the equipment.
  • Any other duties/projects as assigned by Supervisor and/or Management.

Requirements:

  • Specialist certification in culinary arts with 5-8 years of relevant experience with Food and Hygiene Certification.
  • Ability to provide creative innovation in menu, preparation and presentation in culinary forms.
  • Ability to multitask and have good time management skills.
  • Strong leadership qualities to lead and motivate team.
  • Dependable and good team player.
  • Good communication and interpersonal skills.
  • Excellent Service Orientation.
