Britannic Explorer, a Belmond Train, United Kingdom, takes to the rails from July 4, 2025. Paying homage to the British tradition of touring, the train celebrates all that is intriguing, quirky and quintessential about the UK. Three- and six-night journeys take in the illustrious landscapes and vibrant cities of Cornwall, the Lake District and Wales. On board, guests enjoy menus designed by chef Simon Rogan, a Bar, Observation Car and Wellness Suite.

As a Sous Chef at Britannic Explorer, a Belmond Train, you are part of a team responsible for delivering an exceptional culinary experience for our guests. In this role, you will assist the Head Chef in managing the kitchen and ensuring that all dishes are prepared to the highest standards of quality and presentation. Primary Responsibilities Include:
  • Participating in the creation and development of new menu items, tastings, spec sheets, allergens and costings
  • Ensuring compliance with food safety and sanitation guidelines
  • Maintaining an accurate inventory of ingredients and supplies
  • Overseeing the preparation and cooking of menu items during service hours
  • Training and guiding the kitchen team in proper cooking techniques, food handling and safety procedures
  • Acting as required as a senior culinary point of contact for internal and external clients and actively working to build the brand and the quality of our culinary offering
