Cold Town House is one of Edinburgh’s busiest and most exciting hospitality venues, located in the heart of the Grassmarket beneath Edinburgh Castle. Spread across multiple floors, the venue includes three distinct bars, a large rooftop terrace, restaurant space, and our own on-site microbrewery producing the Cold Town Beer range.

We are looking for an experienced and driven Bar Manager to lead the bar operation across the venue. This is a hands‑on role suited to someone who thrives in a fast‑paced, high‑volume environment and has a genuine passion for hospitality, team development, craft beer and cocktails. Working closely with the senior management team, you will be responsible for the day‑to‑day running of all bar areas, ensuring consistently high standards of service, presentation and product quality throughout the venue.

Bar Manager Duties
  • Lead Bar Operations – Oversee all bar operations across the venue, ensuring exceptional service standards and smooth day‑to‑day performance.
  • Team Leadership & Development – Recruit, onboard, train and develop team members, building a knowledgeable, motivated and high‑performing bar team.
  • Drive Service Excellence – Maintain consistently high standards of customer service during busy trading periods, leading from the front and setting the standard for the team.
  • Manage The Drinks Offering – Oversee the development and delivery of the venue's drinks menu, including cocktails, seasonal serves and premium products.
  • Stock & Operational Management – Take responsibility for stock control, ordering processes, wastage management and daily bar procedures to maximise efficiency and profitability.
  • Maintain Compliance & Standards – Ensure compliance with licensing regulations, health and safety requirements, and company operating standards while maintaining exceptional cleanliness and organisation throughout all bar areas.
Required Skills
  • Leadership & Team Management – Proven experience managing and developing teams within a busy, high‑volume hospitality environment.
  • Bar & Beverage Knowledge – Strong understanding of beer, spirits, cocktails and current industry trends, with the ability to coach and inspire others.
  • Operational Expertise – Experience managing stock, ordering systems, wastage controls and venue procedures.
  • Organisation & Communication – Excellent organisational skills, attention to detail and the ability to communicate effectively with guests, team members and senior management.
  • Hands‑On Approach – A proactive, positive attitude with a willingness to lead from the front and support the team wherever required.
  • Hospitality Passion – Genuine enthusiasm for delivering outstanding guest experiences and creating a positive team culture.
