Kitchen No.1 required To lead a busy kitchen in St Andrews, serving high-volume covers while creating fresh, seasonal dishes with locally sourced ingredients.
As No1, Executive Head Chef, you will shape menus, manage costs and lead a full brigade to deliver a memorable dining experience for every guest.
Offer details The successful Executive Head Chef's £70k+ package includes £50-55k salary, bonus potential based on KPI & a crazy amount of Tronc annually.

The Role itself - Managing the day-to-day running of the kitchen in line with company standards.
- Creating and developing seasonal menus, including costing, planning and pricing.
- Controlling food costs, stock levels, storage and rotation to optimise profitability and minimise wastage.
- Overseeing hygiene procedures, allergen processes and health and safety within the kitchen team.
- Ensuring accurate documentation, including daily temperature checks and due diligence records.
- As Head Chef, you will be leading, mentoring and developing the whole kitchen team, including performance management and upskilling.
You, the Head Chef - Will come with proven experience in such a role, or as a Head/Senior Sous Chef ready to step up into full kitchen leadership.
- Strong experience in menu planning, costing and pricing.
- Full understanding of EHO regulations, food safety, allergen procedures and record keeping.
- Demonstrated ability to lead, develop and performance-manage a kitchen team in previous roles.
- Excellent organisational and time-management skills in a high-volume, fast-paced environment.
- Passion for fresh, local ingredients and creating innovative, quality dishes reflective of seasonality.
- Flexibility with working hours as this is not a 9-5 office role.
