The Role: As an Relief Head Chefyou will play a crucial role in ensuring the smooth operation of kitchens across our venues. This dynamic role will see you stepping into various kitchens as needed, running the cook line, and leading busy services to maintain high standards. You will also focus on developing and training kitchen teams, driving food quality, and ensuring compliance with hygiene and safety regulations.
Key Responsibilities:
- Support venues by stepping in to lead kitchen operations when an immediate need arises, including running the cook line and managing busy services.
- Develop strong working relationships with venue teams, motivating and leading them to achieve performance excellence.
- Cook and deliver various styles of cuisine while training venue teams on new dishes and techniques.
- Ensure high standards of food quality, hygiene, and safety across all venues.
- Assist in maintaining and adhering to Health & Safety and hygiene policies and procedures.
- Set and uphold high performance standards, ensuring alignment with company policies and procedures.
- Support Area Operations Chefs and management in achieving monthly food stock targets and aligning with budgeted GP.
- Provide flexible and proactive support to multiple venues, ensuring smooth kitchen operations at all times.
The Person:
The ideal candidate for this role will have:
- Previous experience as a Head Chef in a high-volume kitchen environment.
- Advanced Food Hygiene certification.
- NVQ in Professional Cookery and Food Preparation.
- Excellent knowledge of HACCP, COSHH, and Health & Safety in the workplace.
- Ability to manage weekly reporting of wages, GP, and cash margins.
- Strong coaching and training skills, with the ability to inspire and develop kitchen teams.
