We are looking for an enthusiastic and experienced Assistant Restaurant Manager to join our wonderful Charlie’s Restaurant Team. This is a full-time, permanent position based on an average of 40 hours a week. Availability to work mornings, evenings and weekends is essential. We offer a competitive salary of £32,000 per hour plus gratuities and excellent employee benefits.
The Assistant Restaurant Manager will support the Restaurant Manager and F&B Operations Manager with the day-to-day running of Charlie’s restaurant operation and ensure the smooth delivery of services, creating an exceptional and memorable food and beverage experience for our guests.
Your Key Responsibilities:
- Lead Charlie’s restaurant team to ensure a seamless and efficient dining experience at SCHLOSS Roxburghe in the absence of the Charlie’s Restaurant Manager.
- Work as part of a team, supporting and helping each other with developing and operating all aspects of the business.
- Assist with leading and inspiring the Restaurant team to exceed in their roles, through guidance, training and setting an example.
- Deliver a memorable food and beverage experience for our guests, assisting them with menu choices in an informative and enthusiastic way.
- Maintain sufficient manning for each shift, reviewing regularly during peak occupancy levels.
- Constantly review MEDALLIA feedback while implementing fast actions to improve guest satisfaction.
- Lead daily briefings to ensure all relevant information is shared.
- Maintain the highest standards of service, room preparation and presentation throughout the Restaurant.
- Maintain consistent and effective communication with all departments to ensure the smooth running of the F&B service.
- Be confident in and control cash handling and cash up procedures in line with policies and procedures, ensuring that any queries are rectified with accounts in a timely manner.
- Proficiently upsell and encourage other team members to do the same at every opportunity.
- Ensure quality standards with respect to food, beverage and customer service are consistent and delivered daily.
- Actively manage on the floor while building a rapport with colleagues and guests.
- Manage guest recovery situations promptly and effectively and communicate updates.
- Support management with stock takes, organisation and securing your outlet beverage control.
- Contribute to ideas and initiatives to develop our quality of food and service and increase revenue in the department.
- Support with training of all team members.
- Give regular feedback and recognition to team members.
- Support the Charlie’s Restaurant Manager in the discipline and people management of the team members, including providing regular feedback, performance reviews, and encouraging personal progression.
- Provide assistance to the Charlie’s Restaurant Manager in hiring new team members and the succession planning of the team.
- Identify training needs and opportunities and organise the teams training plans.
- Assist the Charlie’s Restaurant Manager with the scheduling, time keeping and attendance for the department including publishing rotas and organising the teams holiday plans.
- Work as part of the F&B Management team to meet targets for hotel performance KPI’s and guest satisfaction scores.
Your Knowledge & Capabilities:
- Enthusiastic and have a positive personality with the ability to build genuine and trusting relationships.

- Passion for and understanding of 5-star hospitality and delivering exceptional guest service.
- Strong organisational and leadership qualities.
- Excellent communication skills, both verbal and written with the ability to communicate effectively with people at all levels.
- Confident in handling guest complaints.
- Ability to work well under pressure in a fast-paced and changing environment.
Proven Experience/Qualifications:
- Minimum of 2 years’ experience in Food & Beverage or the hospitality industry.
- Previous experience in a supervisory or management role.
- Experience, knowledge and understanding in the luxury hospitality industry.
