We are introducing a new Assistant Food & Beverage Manager role within the hotel, with a dedicated focus on the outlets located in the Manor House. The Assistant Food & Beverage Manager will take responsibility of the Old Manor House, including State Room Lounge, Bar 1745, Sunlaws, Drawing Room and the Conservatory for small events. We are looking for someone who is operationally focused and experienced in managing and developing a diverse team. The successful candidate will bring strong leadership, organisation, and a passion for food and beverage, ensuring the Manor House outlets operate efficiently and consistently to a high standard.
Your Key Responsibilities:
- You will take full responsibility for the day-to-day operation of all F&B outlets within the Old Manor House.
- You are responsible for the welcome and personal care of the guests, ensuring a consistent luxury and personalised guest experience.
- You are responsible for all the F&B activities within the Old Manor House in the hotel under the guidance of the F&B Operations Manager, including service, staff guidance and cost control.
- You will identify opportunities to enhance quality standards regarding food, set up and presentation.
- You will proactively manage guest feedback and guest recovery situations promptly and effectively.
- You will oversee cash handling and cash up procedures, ensuring that any queries are rectified with accounts in a timely manner.
- You will oversee the scheduling, time keeping and attendance for the department.
- You will lead, inspire and motivate the F&B team to make sure they exceed in their roles, through induction, training, management, empowerment, and development.
- You will take full responsibility for people management; including performance management, conduct, and engagement.
- You will assist the F&B Operations Manager in the recruitment and onboarding process for the team.
- Act as a role model, promoting a positive and professional working environment.
- You will keep up to date on the volume of business, respond to daily changes and prepare rotas and holiday plans and ensure team is positioned accordingly.
- You will ensure the careful handling of complaints and accidents, ensure first aid training is up to date.
- Support with training and implementation of HACCP, COSHH and fire procedures.
- Ensure all accidents, incidents, and complaints are handled appropriately and recorded in line with company policy.
- Take full responsibility for stock control, including ordering, storage, stock rotation, and wastage management. Ensure accurate stock levels are maintained and conduct regular stock takes. Implement controls to minimise waste and maximise profitability.
- Alongside the other Assistant F&B Manager you will lead the F&B Team in the absence of the F&B Operations Manager.
- Takeover of manager on duty (MOD) responsibilities, when necessary (service recovery and fire panel alarms), to represent the management and assist with guest situations.
Your Knowledge & Capabilities:

- You are confident with completing administrative tasks and are proficient in Microsoft Office.
- You have good understanding of revenue and cost centres as well as profit and loss statements.
Proven Experience/Qualifications:
- Proven experience 3+ years within the luxury hospitality industry required.
- Management experience essential, preferably in a comparable position and F&B environment.
- You will have in-depth knowledge in wine, spirits and cocktails, preferably a WSET qualification 2 or above.
- Previous experience and knowledge of working with Micros and OpenTable desirable.
