As Sous Chef, you’ll work closely with the Senior Sous Chef to lead a passionate kitchen brigade. You’ll back up our senior sous chefs and be co-operatively taking charge of running smooth and efficient services, ensuring the highest standards of food quality, hygiene, and kitchen organisation are upheld. This is an ideal opportunity for a chef who thrives in a fast-paced, quality-driven environment and has a genuine respect for locally-sourced, sustainable ingredients.

Responsibilities and Duties:

  • Support the Head Chef & Senior Sous Chef in all aspects of kitchen management and food preparation
  • Run and supervise services to a 2 Rosette standard, maintaining calm, clean and efficient working conditions
  • Mentor and train junior members of the team, promoting a positive and professional culture
  • Contribute to menu planning, bringing creative ideas that celebrate Cornish produce and sustainable practices
  • Maintain excellent food hygiene and kitchen safety standards, ensuring all compliance requirements are met
  • Help manage stock levels, deliveries, and minimise waste through good practices and planning
  • Act as a leader

About you:

  • Previous experience as a Sous Chef or strong Junior Sous in a quality-driven kitchen
  • Passionate about food, local sourcing, seasonality and sustainability
  • Strong organisational and leadership skills
  • Calm under pressure, with the ability to manage a steady-paced service confidently
  • A genuine team player who leads by example
  • Knowledge of modern and classic cooking techniques
  • Food hygiene and safety certificates (Level 2 or higher preferred)
