We are seeking a high‑calibre Hotel F&B Manager to oversee all dining and beverage operations at one of the UK’s most prestigious luxury countryside destinations. This role leads a large, diverse team of approximately 75 professionals across multiple refined outlets. The successful candidate must come from a five‑star luxury space, will be a hands‑on leader dedicated to craftsmanship and seasonality, ensuring every guest experience celebrates local provenance and world‑class hospitality.

Key Responsibilities

  • Lead and Inspire: Foster a high-performing culture across all F&B outlets, supporting a team of 75 through direct reports including Restaurant Managers, Head Chefs, and Sommeliers.
  • People Growth: Recruit, train, and mentor team members to ensure high capability and robust succession planning.
  • Service Excellence: Implement clear standards and structures that uphold consistency and professional storytelling regarding produce and craft.
  • Collaborative Design: Work closely with culinary and beverage teams to ensure menus remain seasonal and grounded in the land.
  • Quality Control: Maintain immaculate standards of detail, cleanliness, and atmosphere across all dining spaces.
  • Business Performance: Oversee budget management, forecasting, labour planning, and purchasing to meet financial targets.
  • Analytical Insight: Review sales and cost performance alongside guest insights to drive continuous improvement.

Candidate Profile

  • Experience: Substantial experience managing high-end F&B venues, ideally with a background in luxury hotel operations.
  • Leadership: Proven ability to lead multi-outlet or multi-team operations within the luxury sector.
  • Commercial Acumen: Strong skills in cost control, forecasting, and performance analysis.
  • Technical Proficiency: Experience with systems such as Oracle Opera, ResDiary, and Fourth HR is highly advantageous.
  • Qualities: An approachable, confident communicator with an obsessive eye for detail and a passion for personalized service.
  • Desired Qualifications: WSET Level 2 in Wines/Spirits or a Hospitality Management degree.
