We are now seeking an experienced Senior Baker to join our opening kitchen team. This is a senior, specialist role responsible for leading all baking production, ensuring exceptional quality, consistency, and execution across all bread and baked goods served within the restaurant.
About the RoleAs Senior Baker, you will take ownership of the bakery function, overseeing the daily production, baking, and presentation of all breads and baked items. You will act as the technical lead for dough and fermentation, setting standards and supporting the wider kitchen team.
Working closely with the Head Pastry Chef & Executive Chef, you will play a key role in menu development, production planning, and maintaining the highest standards of craftsmanship, while respecting traditional Italian baking techniques.
Key Responsibilities- Lead and manage all bread and baking production for the restaurant
- Prepare, mix, ferment, shape, and bake a wide range of doughs using traditional and modern techniques
- Produce artisanal Italian breads, breakfast baked goods, and dough-based menu components
- Set and maintain standards for fermentation, proofing, baking times, and finishing
- Plan production schedules to support breakfast, lunch, and dinner service
- Ensure consistency, quality, and presentation across all baked goods
- Collaborate with the senior kitchen team on menu development, seasonal changes, and specials
- Maintain strict food safety, hygiene, and cleanliness standards within the bakery area
- Manage stock control, ordering, yields, and waste related to bakery production
- Train, support, and mentor junior chefs involved in baking and dough preparation
