As Resort Restaurant Manager you are responsible for leading the front-of-house team to deliver exceptional, personalised dining experiences in line with 5-star luxury hospitality standards across The Clocktower and Horto Restaurants and M&E Service. The role ensures flawless service execution, anticipates guest needs, and maintains the highest levels of professionalism, attention to detail, and guest engagement.
Key Responsibilities
- Luxury Service Leadership
- Lead and oversee all front-of-house service operations, ensuring the highest standards of 5-star hospitality are consistently delivered.
- Maintain a strong and visible presence on the restaurant floor during service periods.
- Guide the service team to deliver elegant, attentive, and personalised guest experiences.
- Ensure seamless coordination between the restaurant team, kitchen, bar, and resort departments.
- Guest Experience Excellence
- Anticipate guest expectations and provide intuitive, personalised service.
- Engage with guests professionally and warmly to ensure an exceptional dining experience.
- Handle guest feedback or concerns with discretion, professionalism, and efficiency.

- Team Leadership & Development
- Lead, coach, and inspire the front-of-house team including managers, supervisors, and hosts.
- Conduct daily service briefings to communicate menus, specials, guest preferences, and operational updates.
- Deliver ongoing service training focused on luxury hospitality standards, product knowledge, and guest engagement.
- Foster a culture of pride, teamwork, and service excellence.
- Prepare and manage staff rotas to ensure appropriate coverage for all service periods while controlling labour costs.
- Conduct regular staff appraisals, set performance objectives, and implement development plans.
- Recognise high performance and address performance issues professionally, fostering a culture of excellence.
- Service Standards & Presentation
- Ensure the highest standards of restaurant presentation, table settings, and service etiquette are maintained at all times.
- Monitor service flow to ensure a smooth and elegant dining experience.
- Uphold luxury service standards, dining etiquette, and warm, hospitable guest interaction.
- Ensure the team demonstrates strong knowledge of menu items, ingredients, wine pairings, and resort offerings.
- Operational Excellence
- Support the planning and delivery of private dining, VIP experiences, and resort events.
- Work closely with the chef team to ensure seamless service and exceptional food presentation.
- Monitor reservations and guest flow to optimise seating and service quality.
- Plan and oversee front-of-house service for conferences, weddings, and private events within the resort.
- Ensure all events are executed with the highest attention to detail, luxury service standards, and guest satisfaction.
- Coordinate with the events team, chef team, and other departments to deliver seamless service.
- Payroll & Labour Management
- Monitor staff hours, attendance, and overtime to ensure payroll accuracy and compliance with company policies.
- Review and approve timesheets prior to submission for payroll processing.
- Support labour cost control by aligning staffing levels with business demand.
- Assist with workforce planning, scheduling, and maintaining efficient labour utilisation.
- Financial Accountability
- Oversee accurate posting of guest orders through the POS system.
- Ensure all food and beverage transactions are processed correctly and in accordance with resort procedures.
- Conduct daily cashing-up procedures including reconciliation of tills, card payments, and house charges.
- Investigate and resolve any discrepancies in cash handling or payment reporting.
- Ensure proper documentation and handover of daily financial reports to the finance or accounts team.
