You have a passion for great ingredients, local sourcing and delivering an excellent product consistently.
You enjoy implementing systems and running a clean and tidy kitchen.
In 2016 we re-located to Exmouth to open Ruby Kitchen residency at The Grapevine Brewhouse. This is an exciting venture utilising an 80 cover restaurant in an up & coming environment surrounded by independent businesses. The Grapevine is a busy family run pub with live music and Crossed Anchors Brewery on-site.
To prepare, cook and present food quickly and efficiently to the RUBY specification, every dish, every time.
To ensure the smooth running of the kitchen, at all times with the key aim of delivering food to our customers within 15 minutes.
To work collaboratively with the Front of House team at all times to ensure the customer experience is excellent.
You will work closely with the Head chef in operating the RUBY KITCHEN and in their absence run the kitchen on quieter nights.
Manage the opening and closing of the kitchen.
Prepare, cook and present food, quickly and efficiently, meeting our standards.
Ensure the kitchen is clean, hygienic and tidy at all times and appropriate paperwork completed.
Work to better food, better business guidelines.
Work to guidelines set out by Foods Standard Agency.
Maintain a five-star hygiene certificate.
Ensure that the storage of food meets company and statutory health and safety requirements.
Work safely around kitchen equipment and monitor and deal with any maintenance issues.
Maintain personal knowledge by completing in-house training.
To always have a clean fresh uniform.
Always adhere to all company policies and procedures.
Carry out instructions given by the Head Chef.
Communicate via team meetings, one to one meetings, training sessions, notice boards and written.
