WANT TO BE A PART OF SOMETHING AMAZING?
WHAT WE’D EXPECT FROM YOU;
We're looking for an experienced Kitchen Manager to take ownership of food operations across our three London venues — Old Street, St Mary’s Axe and Holborn. This is a floating role: rather than running a single kitchen, you'll be responsible for consistency, standards and performance across all three sites, splitting your time between them based on where you're needed most — whether that's a scheduled visit, covering a gap in leadership, or supporting a new opening. You'll be the constant thread that keeps food quality, safety, and team standards aligned across every site, working closely with each venue's General Manager and the wider ops team to make sure the kitchen is never the reason a shift goes wrong.
- Kitchen Operations & Standards
- Oversee day-to-day kitchen operations across all three venues, adjusting your schedule based on live business needs.
- Ensure food quality, presentation and speed of service are consistent across every site — no site should feel like the “weak link”.
- Own and maintain recipe specs, portioning, and plating standards so the menu is identical wherever a guest orders it.
- Act as the senior kitchen point of contact when visiting a site, deputising for site-level kitchen leadership as needed.
- Team Leadership & Training
- Recruit, train and performance-manage kitchen teams across all three venues in partnership with each site's General Manager.
- Deliver consistent onboarding and training for new kitchen starters, regardless of which site they're based at.
- Identify and develop future kitchen team leaders within each site.
- Run regular cross-site check-ins so kitchen teams feel connected, not isolated by venue.
- Compliance & Food Safety
- Ensure full compliance with food hygiene, allergen and health & safety standards at every site.
- Own the allergen matrix, SFBB records and cleaning schedules across all three kitchens.
- Lead on audit readiness and act on any environmental health or internal audit findings promptly.
- Stock & Cost Control
- Manage food GP, wastage and portion control across all three sites against budget.
- Oversee supplier ordering, stock rotation and stocktakes, spotting discrepancies early.
- Identify and act on cost-saving opportunities without compromising quality or safety.
- Cross-Site Consistency
- Flag and resolve any divergence in standards, pricing, or menu execution between sites.
- Share feedback on site-specific challenges and opportunities to the Area Operations Manager.
- Support new site openings or menu launches by bringing established standards into new kitchens.
WHAT WE’RE LOOKING FOR FROM AN INDIVIDUAL;
- Essential
- Proven experience as a Kitchen Manager or Senior Sous Chef in a fast-paced, high-volume site.
- Level 3 Food Hygiene certification (or willingness to obtain).
- Strong people-management skills, with experience training and developing kitchen teams.
- Comfortable working across multiple sites and adapting to different teams and layouts.
- Solid understanding of GP, wastage control and stock management.
- Flexibility to work evenings, weekends, and travel between London sites as required.
- Desirable
- Experience in bar, restaurant, or experiential leisure venues.
- Experience supporting new site openings or menu rollouts.
What You Get
- Salary £35,000.
- Tips & service charge shared equally amongst the whole team.
- 50% off food and drink and free gaming.
- Regular team incentives- with rewards including paid trips abroad!
- 2 Staff Socials throughout the year.
- Employee Assistance Program that includes access to free counselling services.
- Access to Rewards Gateway, offering discounts at 100s of retailers.
JOB SPECIFICS
- 45hr working week across 5 shifts.
- It is expected that you will be available to work weekends and public holidays.
- Expected to have a reliable commute to work.
