We are currently looking for a Senior Sous Chef - Holborn Dining Room to join our Culinary team at Rosewood London. The Senior Sous Chef - Holborn Dining Room reports directly to the Head Chef and is responsible for the day to day running of the Holborn Dining Room Kitchen.
Key expectations of this role:
- Observing methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
- Maximising the effectiveness of associates by developing each of their skills and abilities through the appropriate training, coaching and mentoring.
- Consistently maintains established standards across the department through leading by example and quality control.
- Reviews menus, analyses recipes, determines food, labour, overhead costs and assigns prices to menu items.
- Effectively running the service on a day to day basis and supporting the Head Chef.
Profile:
- The ability to demonstrate leading and developing people effectively.
- Proven culinary skills in a high volume, upscale brasserie restaurant environment.
- The ability to build strong relationships with the floor team of Holborn Dining Room.
- Being able to make impactful decisions independently through problem solving.
