Rosedon Hotel requires a well-trained professional Junior Sous with a minimum of two years experience to work in our kitchens. The Junior Sous must have experience in Portuguese Cuisine. You must be experienced and understand workings of a kitchen to include food preparation, cooking and presentation. A clean and neat appearance is required.
Responsibilities:
- Maintain current knowledge of restaurant features/services, hours of operation, restaurant food concepts, menu price range, meetings/events.
- Complete opening & closing side duties as assigned.
- Prepare all menu items following recipes & yield guide.
- Minimise waste & maintain controls to attain forecasted food cost.
- Assist in inventory, receive deliveries & communicate usage.
Must have a minimum of 2 years' experience in a similar role at an upscale establishment. A well-trained professional will have experience in all areas of food preparation, cooking, presentation & recipe alteration. Applicant must have experience cooking Portuguese cuisine. Completion of a culinary arts program & food handling certificate preferred.
Please note that we do not provide accommodation although we will provide a room at the hotel for one month whilst you settle in and search for somewhere locally. You will need a work permit for this role which we will apply for. The process can take around 12 weeks to complete. You will need to provide a police report to obtain this.
