Mimosa is a premium bar, restaurant, and club with four distinct spaces: a rooftop terrace, ground-floor dining area, VIP mezzanine, and club lounge.
We are seeking an experienced Bar Manager to lead bar operations across the venue and support an exceptional guest experience across both relaxed daytime service and high-energy late-night events.. .
You will take ownership of the bar programme, including stock control, supplier relationships, staff scheduling, training, service standards, and performance monitoring.
Working closely with the General Manager, you will help maintain consistent quality and efficient operations across all spaces.. .
Key responsibilities.
- * Manage daily bar operations across all venue spaces, adapting service to each setting..
- * Recruit, train, schedule, and support bartenders and bar-backs..
- * Oversee stock ordering, supplier relationships, cost control, and waste reduction..
- * Maintain and develop the cocktail and drinks menu with the wider team..
- * Ensure compliance with licensing, health and safety, and responsible alcohol service requirements..
- * Monitor sales performance and bar KPIs using the Toast POS system..
- * Support private hire and events with tailored drinks packages..
- * Uphold a premium, guest-focused standard on every shift..
What we’re looking for.
- * Proven experience managing a bar in a high-volume, premium hospitality environment..
- * Strong leadership, communication, and team-building skills..
- * Sound knowledge of stock management, P&L, and cost control..
- * Understanding of licensing law and responsible alcohol service..
