Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. As Breakfast Manager, you will lead the morning service and set the tone for the day’s hospitality experience. Working closely with senior management, you will take full ownership of breakfast operations, ensuring seamless service, exceptional guest experiences, and the highest standards of quality and consistency. This is a hands-on leadership role, ideal for someone who thrives in fast-paced, high-end restaurant environments and enjoys leading from the front.
Key responsibilities:
- Oversee and manage all aspects of breakfast service, ensuring smooth, efficient, and welcoming operations from opening through close.
- Lead, motivate, and support the front-of-house breakfast team on the floor, maintaining a strong presence during service.
- Uphold the restaurant’s high standards of hospitality, service excellence, and attention to detail at all times.
- Work closely with senior management to support daily operations and ensure alignment with overall business goals.
- Assist with scheduling, rotas, and floor plans to ensure optimal staffing levels and service flow during breakfast.
- Ensure full compliance with health & safety, hygiene, and licensing regulations.
- Play an active role in promoting and maintaining sustainable practices across breakfast operations.
- Handle guest feedback and resolve any issues promptly and professionally.
About you:
- Proven experience as a Breakfast Manager, Restaurant Manager, or Assistant Restaurant Manager in a fast-paced, high-end restaurant environment.
- Strong leadership skills with a confident and approachable floor presence.
- Highly guest-focused, with a natural ability to deliver warm, memorable hospitality.
- Excellent communication, organization, and time-management skills.
- Calm under pressure, with the ability to manage busy services and make quick, effective decisions.
- A collaborative team player who can inspire, develop, and support colleagues at all levels.
