Named after native deer of the British Isles, Roe will follow the same nose-to-tail and root-to-stem ethos as its critically acclaimed sister restaurant, Fallow St James’s. The extensive a la carte menu will be divided into nibbles and flatbreads, skewers, and grilled options, with larger plates and sides also available. As well as championing modest, British ingredients, Roe’s dishes will showcase underused and underappreciated produce.
As an Assistant Head Sommelier at Roe, you will play a pivotal role in shaping our wine program and enhancing the overall guest experience. Working alongside the Head Sommelier, you will bring depth of knowledge, creativity, and leadership to a dynamic team. Key Responsibilities- Provide expert guidance on wine and beverage selections, offering thoughtful pairings that complement Roe’s progressive cuisine.
- Work with the Head Sommelier to curate and maintain an engaging, diverse, and sustainable wine list.
- Build strong relationships with suppliers to source distinctive wines that reflect Roe’s ethos.
- Lead by example in service standards and wine knowledge, consistently delivering memorable guest experiences.
- Train and mentor junior team members, nurturing a culture of growth, excellence, and enthusiasm for wine.
- Manage stock levels, conduct regular inventory, and support cost control initiatives to drive profitability.
- Proven experience as a Senior Sommelier or Assistant Head Sommelier in a high-quality, service-driven restaurant.
- WSET Level 3 (minimum) or equivalent certification, with a strong desire to continue professional development.
- Confident in guest interaction, with excellent communication and interpersonal skills.
