Position : Sous Chef – Rockwater Branksome, Dorset, United Kingdom

As the Sous Chef, you will work closely with the Head Chef to ensure the highest standards of food quality, food safety, health and safety, and tight cost controls.

You will assist in the day‑to‑day management of the kitchen, oversee workflow, production, stock levels, hygiene, and staff training, while providing guidance and motivation to the kitchen team.

You will also work with Senior Chefs to analyze guest feedback and implement cost‑control measures.

Responsibilities

  • Assist in the management of the kitchen, ensuring efficient workflow and timely food production.
  • Oversee stock levels of food and equipment, support ordering and minimise waste.
  • Conduct regular kitchen inspections to maintain cleanliness and hygiene standards.
  • Oversee the preparation, cooking, and presentation of dishes to maintain high quality and consistency.
  • Provide guidance and training to kitchen staff, ensuring adherence to recipes, portion control and presentation.
  • Lead and motivate kitchen staff, fostering a positive and collaborative working environment.
  • Ensure all dishes meet required taste, appearance, and portion size standards.
  • Monitor and address guest feedback, working with Senior Chefs to make necessary adjustments.
  • Work with Senior Chefs to implement cost control measures such as portion control and waste reduction.
  • Collaborate with all departments within Rockwater to ensure smooth overall operations.
  • Comply with legal requirements under the Health & Safety Act 1974 and food hygiene regulations.

Qualifications

  • Minimum 1 year experience as a Sous Chef in a premium high‑volume venue.
  • Experienced in managing large kitchen teams.
  • Strong knowledge of food safety, health and safety standards, and cost control.
