As the Junior Sous Chef at Rockwater, you will play an important role in our kitchen management team. You will work alongside the Head Chef and Sous Chefs to ensure the highest standards of food quality, food safety standards, health and safety standards, and tight cost controls. Your responsibilities will include:

  • Assisting in the day-to-day management of the kitchen, ensuring efficient workflow, timely food production, and adherence to health and safety standards.
  • Running busy sections, cooking food to Rockwater specifications.
  • Conducting regular inspections of the kitchen to maintain cleanliness and hygiene standards.
  • Preparation, cooking, and presentation of dishes to maintain high quality and consistency.
  • Providing guidance and training to kitchen staff, ensuring adherence to recipes, portion control, and presentation standards.
  • Leading and motivating kitchen staff, fostering a positive and collaborative working environment.
  • Ensuring that all dishes meet the required standard in terms of taste, appearance, and portion size.
  • Monitoring and addressing guest feedback, working with the Senior Chefs to make necessary adjustments.
  • Working closely with the Senior Chefs to implement cost control measures, such as portion control and waste reduction.
  • Collaborating with all departments within Rockwater to ensure smooth overall operations.
  • Compliance with legal requirements under the Health & Safety Act 1974 and food hygiene.
  • Training of new chefs and kitchen porters.

The Ideal Candidate:

  • At least 1 year’s experience as a Junior Sous Chef or Kitchen Supervisor in a premium high-volume venue.
  • Experienced in managing large teams.
